You are right: Two major versions exist NOS and Oversampling model.
Olivier is a smart person and he is right!
The NOS is asynchronous DAC. The NOS uses its own internal Master clock at 100Mhz. The incoming signal is clocked against this clock and this is in theory this is less good than a synchronous DAC like the HE-7. The NOS HE-7 still benefit from the good clocks in the Mano but since it has also its own master clock which may not as good as the Mano clocks and also because it is an asynchronous process (2 master clocks, there can only be one captain :-) ) there is a limit while the HE-7 will not reach this limit, the Mano is the limit (in theory)

Now in practical the NOS sounds also very good. My personal preference is the HE-7, but one of my friends with a very good setup likes the NOS more (he also uses a Mano!)
Olivier is right but I would chose what I like more and not what in theory is the best.

En clair tu fais comme tu veux, mais pas la peine de prendre une version NOS car tu reclockeras deux fois le même signal et il ne peut y avoir qu'un seul "capitaine"
